This is the first time I’ve tried this combination, and it turned out to be delicious!
** Egg-plant (Brinjal) and Bell Pepper (Capsicum) curry **
Preparation time: 5 mins
Cooking time: 15 mins
Ingredients:
Egg-plant – 1 large (diced)
Bell Pepper – 1 (diced)
Green Chillies – 5 (finely chopped)
Oil – 2 table spoons
Coriander to garnish
Salt to taste
For seasoning:
Mustard seeds – 1/2 table spoon
Chana dal – 1/2 table spoon
Urad dal- 1/2 table spoon
Heeng – 1 pinch
Recipe:
1) In a heated skillet, add oil and ingredients for seasoning; let them pop.
2) Add chopped egg-plant and bell-pepper to the skillet; let it cook for 13 minutes.
3) Add salt to taste and chopped green chillies
Garnish with coriander and the curry is ready to serve!
This is a very simple recipe and looks yum too
