Sarso ki saag is the healthiest food. Its an all green curry that is good for eye sight and also gives strength.

Spinach- 1 bunch (washed thoroughly and finely shopped)
Mustard leaves – 1 bunch (washed thoroughly and finely shopped)
Onion – 1 large (chopped)
Green chillies – 4 (chopped)
Ginger paste – 1/4 table spoon
Ghee – 2/3 table spoons
1) Boil the leafy veggies in water for about 17 minutes. Cool them to room temperature.
2) Once cooled, blend the leafy veggies + green chilles and ginger in a grinder to fine paste.
3) In a pan, heat oil; fry the chopped onion till light yellow. Now add green paste to the pan and lower the flame to medium. Cook for 10 mins. Add salt as per taste.
4) Add ghee and serve the sarso ki saag!
Best when served with Makki ki roti or naan. Personally, I prefer naan over the makki ki roti. Enjoy!
