Healthy Mixed Veggie Rice

Mixed veggie rice is a healthy, simple to cook substitute for vegetarian fried rice. 

**Mixed veggie rice **

Cooking time – 20 mins 

Preparation time – 10 mins 


Green peas – 1/4 cup (measurement cup = 250 ounces)

French beans( cut) – 1/4 cup

Carrot (chopped/grated) – 1/4 cup

Corn kernels – 1/4 cup 

Rice (basmati) – 4 cups ( Each cup = 250 ounces)

Salt to taste 

Black pepper (crushed) – 1 1/2 table spoons

Red chilly powder – 1 table spoon 

Jeera poswer – 1/2 table spoon 

* Electric rice cooker takes 20 mins to cook while traditional pressure cooker takes about 17 minutes to cook the veggie rice *


1) In an electric rice cooker add rice and veggies. Let it cook. 

2) After the rice is cooked, add salt to taste, red chilly powder, black pepper, and jeera powder; Mix thoroughly. 

Healthy mixed veggie rice is ready to eat!
