Aloo- Bhindi (Potato-Okra) sabji

Aloo is everyone’s favorite – one can never go wrong with it. Aloo and bhindi cooked with masala is an amazing combination to eat with either pulka or rice.

**Aloo- Bhindi sabji**

Cooking time: 20 mins

Preparation time: 15-20 mins 


Aloo (potatoes) – 2 (large in size, diced)

Bhindi (okra) – 1/4 kilo (washed, patted dry, cut into horizontal or vertical 1 inch)

Green chillies – 2 or 3

Ginger-garlic paste – 1/2 tablespoon


          Godha masala (Maharashtrian spice; available in Indian grocery stores) – 1 table spoon , dhaniya powder – 1 table spoon

For seasoning: Cumin seeds, poppy seeds – 1/2 tablespoon each

Salt to taste


1) Heat the pan with 1 table spoon oil- add cumin poppy seeds and let them pop.

2) Add diced aloo to the pan, cover it with a lid and let it cook for 5 mins.

3) Now, add bhindi to the pan ; pour 2 table spoons of water and add godha masala, dhaniya powder -> stir well.

4) Cover the pan with a lid and let the water evaporate; then add ginger-garlic paste, green chillies, and salt to taste -> stir well and let it cook for 2 mins.

Aloo- Bhindi is ready to eat! Enjoy..
